When traveling, I always hit up a local pho spot. For those that haven’t had this soulful food yet, it is a rice noodle soup that originated in Southeast Asia. The heart of the dish is the broth that is made from hours of slow boiling the beef bones mixed in with roasted spices.

- 1 pack of rice noodles
- 1 lb. beef bones or ox tail bone
- pork meatballs
- beef brisket
- beef flank
- pork cutlets or pork belly
- scallops (optional)
- cilantro
- scallions
- thai basil
- water sprouts
- lime
- hoisin sauce
